What it not to like boiled potatoes in a cupcake form. They are just so cool to serve in the morning.

  • 3 medium boiled potatoes
  • 1 onion, chopped and boiled
  • 1 cup whole wheat flour or ½ cup oatmeal
  • 1 medium egg
  • ¼ cup olive oil
  • ¼ cup water
  • 1 teaspoon baking powder
  • Salt and black pepper to taste
  • Green thyme leaves, dill or parsley (optional).

  • Add boiled potatoes to a large bowl and mash well. Mix in boiled onion. Add the egg; mix until thoroughly incorporated.
  • Mix all dry ingredients; whole wheat flour, baking powder, black pepper and salt together.
  • Add the dry ingredients to the potato mixture with some water. Add in olive oil.
  • Spray muffin tins with cooking spray. Now fill the muffin cups. Fill almost to the top. Bake at 180° until golden brown on top.
  • Serve with your favorite baked potato toppings (Tahini sauce, thyme or green salad).
