Fattoush is one of the most well-known Middle Eastern dishes. In my fattoush salad, I add plenty of fresh vegetables and dry bread without using frying oils.
Half a loaf of Shami dry bread .
The juice of ½ lemon.
2 tbsp Tahini.
1 small orange bell pepper.
4 lettuce leaves.
2 tbsp boiled or canned chickpeas.
Dry mint, sumac and salt to taste.
Olive oil (optional).
Here’s how to make this delicious, plant-based recipe.
Break the bread into pieces, and soak in water for 5 minutes until soft. (You can use brown bread).
In a bowl, place soaked bread and mash with a spoon. Combine tahini, lemon juice, sumac and dry mint. Add salt and olive oil, if desired.
Add the chopped tomato, cucumber and bell pepper to the mixture. Whisk together all the ingredients.
Sprinkle chickpeas and a bunch of fresh mint leaves on the top. Serve.
