Fattoush is one of the most well-known Middle Eastern dishes. In my fattoush salad, I add plenty of fresh vegetables and dry bread without using frying oils.
Here’s how to make this delicious, plant-based recipe.
2-3 Servings
  • Half a loaf of Shami dry bread .
  • The juice of ½ lemon.
  • 2 tbsp Tahini.
  • 1 tomato.
  • 1 cucumber.
  • 1 small orange bell pepper.
  • 4 lettuce leaves.
  • 2 tbsp boiled or canned chickpeas.
  • Dry mint, sumac and salt to taste.
  • Olive oil (optional).

  • Directions:
  • Break the bread into pieces, and soak in water for 5 minutes until soft. (You can use brown bread).
  • In a bowl, place soaked bread and mash with a spoon. Combine tahini, lemon juice, sumac and dry mint. Add salt and olive oil, if desired.
  • Add the chopped tomato, cucumber and bell pepper to the mixture. Whisk together all the ingredients.
  • Sprinkle chickpeas and a bunch of fresh mint leaves on the top. Serve.
