1 medium sized zucchini.
1/2 cup chia seeds.
1/2 cup of corn flour.
1 table spoon olive oil.
2 teaspoons of dried or fresh herbs (I used oregano and basil, but thyme would also work).
1 teaspoon of basil.
salt and pepper to taste.
Preheat oven at 200°C.
Grate zucchini and add salt. Let it sit for some 10 minutes. Meanwhile put chia seeds into the cup and pour over hot water.
The chia will act as an egg in the recipe. Squeeze the zucchini to get an excess liquid out of it.
Transfer zucchini into a bowl and add grated carrots and the rest of the ingredients. Mix well. If you are having troubles mixing in the flour properly, add some water or rice milk.
Line a baking sheet with a parchment paper. Drop spoons of the mixture leaving some space between each one. Bake the fritters for 10 minutes, flip them and bake for 10 more minutes.
Serve with salad or some fresh vegetables.
Tip: If you do not have chia, you can also use flax seeds in the same way.
