In the heart of Italy I learned how to make the freshest most delicious pizza you’ll ever taste! And now I want to share that fabulous recipe with you!

  • Pizza dough
  • 2 large fresh tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp dried basil
  • 1.5 cups cherry tomatoes (chopped into fours)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 cup Fresh basil leaves
  • 2 buffalo mozzarella balls

The pizza dough is a whole recipe on its own, but I recommend this recipe:

Ingredients of pizza dough:

  • 1 1/2 teaspoons active dry yeast
  • 1/2 teaspoon white sugar
  • 1/2 cup lukewarm water
  • 2 cups sifted all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 egg, beaten

how to make the dough?

  • Stir yeast and sugar into lukewarm water, using a fork.
  • Let stand in a warm place until a creamy layer forms on top of the water, about 10 minutes.
  • Mix flour and salt in a large bowl. Mix olive oil into flour and stir for 2 minutes.
  • Pour yeast mixture and beaten egg into flour mixture and stir to make a stiff dough.
  • Turn dough out onto a floured work surface and knead until springy and smooth, about 8 minutes.
  • Place dough into a floured bowl and cover with a piece of plastic wrap wiped with a thin film of olive oil.
  • Let dough rise until doubled, about 1 hour.
  • Punch down and roll out to desired shape.

However, in Italy they let the dough rise over night so ignore the 1 hour rise time and let that dough expand!

Tomato Sauce (in food processor)

2 large fresh tomatoes

2 tbsp tomato paste

1 tbsp dried basil

Action: Roll pizza dough to 5mm thickness onto a pizza block or pan lightly oiled with olive oil (you’ll probably have pizza dough left, put in a ziplock and freeze for another day). Spread the tomato sauce on the pizza dough and put in the oven (220 C) until dough browns a bit (approx. 20 minutes).

Cherry Tomato Topping

Combine in Bowl

1.5 cups cherry tomatoes (chopped into fours)

1 tbsp dried basil

2 tbsp olive oil

1 tsp salt

Action: Take pizza base out of oven. Distribute basil leaves on top, then add cherry tomato topping (make sure to squeeze the water out before adding, you can use left over water as a salad dressing!).

finally distribute the buffalo mozzarella (shredded). And there you have it! The freshest most delicious pizza you’ll ever eat!
