Speedy Upside Down Maqloobeh Recipe

My speedy maqloobeh recipe  One of the healthiest meals (as long as you don’t pig out on it ) 


  • Boil 5 chicken (chopped breast or leg) with:
  • 1 chopped onion.
  • 1 cinnamon stick.
  • 1 tbsp all spice.
  • 1 tbsp cardamom.
  • 1 tbsp coriander.
  • 1 tbsp cumin.
  • 1 tsp turmeric.


  • Sauté 1 large chopped cauliflower in a pan and add to boiled chicken with 2 cups of soaked basmati rice.
  • Add water until 1 cm above rice/as needed.
  • Add salt to taste. Mix and wait until rice cooks (approx 15 min).

This isn’t the ‘traditional’ way of making maqloobeh but it’s my speedy way
